It is not any type of air and only air with very cold temperatures just above freezing. This is to enable the preservative process to occur and the enzymes can work on the muscle tissue allowing the meat to slowly dehydrate.
A slice of dehydrated meat will not promote the growth of many bacteria, especially in cold temperatures too. This can change the texture and flavour of meat, making it more intense.
Wet aged beef, on the other hand, is a method that is just newly introduced for preservation. This is through the usage of plastics and refrigerators. The beef is preserved in vacuum-sealed plastics and is shipped to the market directly after package.
Within a period of 4-10 days, the ageing of beef will take place where the enzymes tenderize the meat enough to make it tasty. Thus, this is a popular choice.
